CHOCOLATE CHIP SURPRISE COOKIES (Gluten-Free)

Chocolate chip cookies are an American classic cookie. The texture needs to be soft and chewy and have chocolate pieces evenly spread throughout. This happens to be one of my husband’s favorite cookies. When we started cooking from scratch we started playing with flavors. One that we started adding in was cherry, and what goes together better then chocolate and cherry. This is how our Chocolate Chip Surprise Cookies were born. They are the classic with a twist and of course gluten-free.
Why Ingredients Matter
Cookies are not healthy, and I am not going to try to tell you they are. I am going to tell you they don’t have to be as bad for you as store bought cookies. Choosing your ingredients wisely can help your body process the cookies better, not ruin your gut health and have more vitamins and minerals present. Not to mention it is real food and not food full of ingredients you can’t pronounce. So sourcing quality sugar, healthier chocolate chips, and using homemade vanilla can absolutely make these cookies not as guilty of a pleasure.

Sourcing Bulk Ingredients
Most of my ingredients I try to source in bulk. I do enough cooking and baking from scratch that it is more cost effective for me to purchase in bulk. If you are interested in building your pantry on a budget, I highly suggest checking out Azure Standard. I can order from them once a month if I want to, which I don’t need to do that, and meet a semi-truck at a specific drop location. Everyone purchasing helps unload all the product for that drop and then we take our goods and head home. I have saved so much money this way. For example, the items I have in bulk for this recipe are: sugar, organic chocolate chips, gluten free flour, baking soda and the dehydrated Bing cherries all of which I get from Azure Standard.
I also have a great source for vanilla beans and make my vanilla extract and vanilla sugar in bulk. If you have not started to purchase in bulk, I highly suggest taking the time to do a price comparison, especially on spices and flours, before jumping into your holiday baking. Chocolate Chip Surprise Cookies (Gluten-Free)
Equipment
- Silicone Spatula
Ingredients
- 1 cup unsalted butter softened
- 1 cup sugar
- 1.5 cup brown sugar
- 2 tsp salt
- 3 eggs
- 1 tbsp vanilla extract
- 1 tsp baking soda
- 3 cups gluten-free 1 for 1 all-purpose flour we use Bob’s Red Mill
- 2 cups chocolate chips We use mini semi sweet
- Dehydrated Bing Cherries 1 per cookie
Instructions
- Preheat oven to 375 degrees.
- In your stand mixer beat butter, sugar and brown sugar until thoroughly combined, on speed 2. Scrape down edges if needed.
- Add salt, eggs and vanilla extract until combined. I leave my mixer running as I add each item and scrape the bottom and edge of bowl before moving on to next step.
- Add flour and baking soda. Mix just until fully incorporated. I start on speed 2 to get it mostly mixed in, stop it scrape the edges and then turn it to speed 4 for the final quick mix.
- Add Chocolate chips until evenly mixed throughout dough. This does not take long, and you don’t want to over mix with flour in it so make sure to pay attention.
- Line your cookie sheet with parchment paper.
- Using a tablespoon measuring spoon, scoop a heaping tablespoon of dough. Using your finger press 1 dehydrated sweet cherry in the center of each cookie. You will cover the cherry with edges of the dough, creating the surprise.
- Place cookies 2 to 3 inch’s apart on cookie sheet and bake for 10-12 minutes, until lightly golden brown.
- Remove from oven and let cool on tray for 2 minutes, then transfer to a parchment lined counter to continue to cool.
