HOW TO MAKE GLUTEN-FREE VANILLA CUPCAKES

Birthday parties, school parties and many holidays can be a struggle for a kid with a gluten allergy, or intolerance. Cupcakes are the commonly served dessert at just about any gathering with kids. My daughter and I wanted to create a classic vanilla cupcake recipe that the majority of kids would enjoy. It was important to us that it was light and moist and that it didn’t taste chalky at all. When we nailed this recipe we topped it with our delicious Vanilla Orange Cream Cheese Frosting. This combination is the taste of summer in a cupcake.

These cupcakes can be decorated to match any theme of any party. This way you can bring a gluten-free vanilla cupcake to any event. If you have a school age kiddo with an allergy you can freeze some unfrosted cupcakes and have them ready to use whenever a last-minute party invite comes in. Just allow them to come to room temp and frost them.

Vanilla Cupcake Tips

  • Let the frosting be the flavor punch. To much vanilla can be a real problem. (I can’t believe I am saying this)
  • If you do want just a little extra vanilla though, replace half of the sugar with vanilla sugar.
  • Using Coconut Milk and Avocado Oil allow this recipe to be dairy free as well.
  • Homemade vanilla extract and homemade vanilla sugar make all the difference.
  • Always use unsweetened applesauce.

Sourcing Bulk Ingredients

Most of my ingredients I try to source in bulk. I do enough cooking and baking from scratch that it is more cost effective for me to purchase in bulk. If you are interested in building your pantry on a budget, I highly suggest checking out Azure Standard. I can order from them once a month if I want to, which I don’t need to do that. I then meet a semi-truck at a specific drop location. Everyone purchasing helps unload all the product for that drop and then we take our goods and head home. I have saved so much money this way.

I also have a great source for vanilla beans and make my vanilla extract and vanilla sugar in bulk. If you have not started to purchase in bulk, I highly suggest you start. Take the time to do a price comparison, especially on spices and flours. Now let’s get to the recipe…

Vanilla Cupcakes (Gluten-Free)

Ingredients
  

  • 1.5 cups all-purpose gluten-free flour we use Bob’s Red Mill
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup coconut milk
  • 1/3 cup avocado oil
  • 1 Tablespoon vanilla extract

Instructions
 

  • Preheat oven to 350 degrees.
  • Add all ingredients to a large bowl. (I suggest starting at the top of the ingredients list with the dry ingredients and work your way down the list.)
  • Whisk all ingredients together until well mixed and there are no dry clumps.
  • Line muffin pan with cupcake liners. I love using the tulip style muffin liners.
  • Stir batter one more time. Then, add 1/4 cup of batter to each liner.
  • Bake at 350 degrees for 25-30 minutes. The muffins should be golden. (When doing the toothpick test it should come out clean.)
  • Allow to cool in pan for 2 minutes.
  • Remove from pan and allow to cool completely before frosting.
  • Top with frosting of choice. I highly suggest pairing with my Vanilla Orange Cream Cheese Frosting recipe. YUM!

This batch will make 12-15 cupcakes.
If you are making ahead, you can store them in the fridge without frosting and frost before serving.
