Preheat oven to 375 degrees.
In your stand mixer beat butter, sugar and brown sugar until thoroughly combined, on speed 2. Scrape down edges if needed.
Add salt, eggs and vanilla extract until combined. I leave my mixer running as I add each item and scrape the bottom and edge of bowl before moving on to next step.
Add flour and baking soda. Mix just until fully incorporated. I start on speed 2 to get it mostly mixed in, stop it scrape the edges and then turn it to speed 4 for the final quick mix.
Add Chocolate chips until evenly mixed throughout dough. This does not take long, and you don’t want to over mix with flour in it so make sure to pay attention.
Line your cookie sheet with parchment paper.
Using a tablespoon measuring spoon, scoop a heaping tablespoon of dough. Using your finger press 1 dehydrated sweet cherry in the center of each cookie. You will cover the cherry with edges of the dough, creating the surprise.
Place cookies 2 to 3 inch's apart on cookie sheet and bake for 10-12 minutes, until lightly golden brown.
Remove from oven and let cool on tray for 2 minutes, then transfer to a parchment lined counter to continue to cool.
