NOT YOUR MAMAS ATOLE – GLUTEN AND DAIRY FREE

Until I met my husband I had never heard of Atole. Then one year, a few years after we had been married, he out of the blue asked if I could find a recipe for Atole. It was something from his childhood that he remembered fondly and was craving that winter. So off to google I went to figure out what Atole was.

Atole Sparked Creativity

When I first saw the ingredients, I thought man this is going to be disgusting. I made it anyway because my love for my husband was stronger than the concern for what I was about to ingest. And when I say ingredients, I mean one… Masa! Who puts Masa in a beverage? Brilliant people do, that’s who! The recipe I tried was delicious. We made it a few times over the next couple of years.

During that time, we stopped buying regular milk and started experimenting with different seasonings and getting creative in the kitchen. The idea that half of my tortilla ingredients could create a delicious dessert really opened my mind to exploring new possibilities with recipes. Now we didn’t change our Atole recipe that much, but we did put twists on it to make it our own. Utilizing shelf stable dry coconut cream instead of milk and adding apple pie spice instead of just cinnamon really puts a twist that has become our family’s favorite.

Sourcing Bulk Ingredients

Most of my ingredients I try to source in bulk. I do enough cooking and baking from scratch that it is more cost effective for me to purchase in bulk. If you are interested in building your pantry on a budget, I highly suggest checking out Azure Standard. I can order from them once a month if I want to, which I don’t need to do that, and meet a semi-truck at a specific drop location. Everyone purchasing helps unload all the product for that drop and then we take our goods and head home. I have saved so much money this way. For example, the items I have in bulk for this recipe are: masa, dry coconut cream, apple pie spice, sugar and molasses, all of which I get from Azure Standard.

I also have a great source for vanilla beans and make my vanilla extract in bulk. If you have not started to purchase in bulk, I highly suggest taking the time to do a price comparison, especially on spices and flours, before jumping into your holiday baking. Now let’s get to the recipe…

Not Your Mamas Atole

Equipment

Ingredients
  

  • 1/2 cup Masa Harina
  • 4 cups water
  • 3 tbsp dry coconut cream*
  • 1/4 cup packed brown sugar
  • 1 1/2 tsp apple pie spice
  • 2 tsp vanilla extract

Instructions
 

  • In a small to medium pot add all ingredients except for the vanilla extract.
  • Stir over medium high heat until mixture comes to a boil.
  • Turn to medium low heat and simmer for 5-10 minutes until it reaches the texture you desire. (you want it to thicken up a bit and give a little resistance to the spoon, but you don’t want it to be paste texture) I usually heat mine for 8 minutes.
  • Turn off heat and stir in vanilla extract.
  • Serve immediately. Atole continues to thicken as it cools.

Notes

We like to enjoy Atole on a cold morning for breakfast with a side a fruit, or as dessert in front of the fireplace. It is both filling and comforting. This recipe is both gluten and dairy free.
*If you do not have dry coconut cream you can use only 3 cups water and 1 cup coconut cream for the same flavor.
