HOW TO MAKE CHEESE SAUCE

Once we finally figured out a handmade gluten-free pasta that tastes just like regular homemade pasta, it was time to make a cheese sauce. There is something so nostalgic about cheese and pasta, and mac and cheese used to be one of my daughter’s favorites. This recipe tastes very close and even better then mac and cheese to us.

Switch It Up

Once you make this sauce and get the families input on it, try switching it up. I am looking forward to doing half smoked gouda and maybe a white cheddar. The combinations are endless and limited only by your imagination. I think this sauce would also be amazing over broccoli and a baked potato. Sourcing Bulk Ingredients

Most of my ingredients I try to source in bulk. I do enough cooking and baking from scratch that it is more cost effective for me to purchase in bulk. If you are interested in building your pantry on a budget, I highly suggest checking out Azure Standard. I can order from them once a month if I want to, which I don’t need to do that. I then meet a semi-truck at a specific drop location. Everyone purchasing helps unload all the product for that drop and then we take our goods and head home. I have saved so much money this way. For example, the items I have purchased in bulk for this recipe are: salt, pepper and gluten-free flour both I get from Azure Standard.

If you have not started to purchase in bulk, I highly suggest you start. Take the time to do a price comparison, especially on spices and flours. Now let’s get to the recipe…

Cheese Sauce

Cook Time 15 minutes

Servings 4

Ingredients
  

  • 2 Tablespoons unsalted butter
  • 2 Tablespoons gluten-free one for one flour. We use Bob’s Red Mill..
  • 1/8 teaspoon salt
  • 2 cups whole milk
  • 2 cups cheddar cheese shredded
  • A pinch of black pepper

Instructions
 

  • Melt butter over medium heat in medium pot.
  • Add gluten-free flour and salt, whisking constantly until all flour is absorbed. This may not create a thick paste at this point and that is ok. It should look kind of foamy and well mixed. This will take a minute or two.
  • While whisking, pour in whole milk. The cold temperature of the milk may cause your flour and butter mixture to clump. That is ok. Just keep whisking.
  • Bring milk to a slow boil. You do not want to walk away during this. You need to be whisking frequently, making sure you are scraping the bottom of the pot. Otherwise, the bottom will thicken and burn.
  • Once your mixture starts thickening* and bubbling add in shredded cheese and a pinch of pepper. Continue to whisk mixture until cheese is completely melted.
  • Turn off heat and top your favorite pasta, baked potato or even broccoli with it.
