Ingredients
  

  • 4 cups Grated Carrot (About 4 large carrots)
  • 1/2 cup Raisins
  • 1/2 cup Crushed Pineapple
  • 1/3 cup Avocado Oil Mayonnaise (Or mayo of choice)

Instructions
 

  • Grate carrots.
  • Add all ingredients in a medium bowl.
  • Stir well until thoroughly combined and evenly coated.
  • Chill for 1-2 hours or overnight.
  • Enjoy!

Notes

The longer the salad chills, the more the carrots will break down and the flavors will meld.  Your chill time will be a preference based on texture and flavor.
